The cinnamon story

The name cinnamon comes, via Greek and ancient Hebrew, from the Indonesian words which mean "sweet wood". 

Cinnamon is grown across Asia. The two most highly prized types are Ceylon cinnamon which comes from Sri Lanka and Saigon cinnamon which comes from Vietnam. Supermarket cinnamon generally comes from Indonesia or China.  

Cinnamon is actually the peeled bark of the cinnamon plant, which is part of the Laurel family.

Some people prefer the subtle taste of Ceylon "true cinnamon". Others prefer the bolder cassia taste of Saigon cinnamon which has the highest oil content of all cinnamons, giving it its uniquely intense taste. In both cases the cinnamon is nurtured according to age-old natural farming methods, free of any pesticides, and is harvested skillfully by hand. The thin inner bark is peeled off the cinnamon branch after the rainy season when it is soft. The bark then curls as it dries. 

In Sri Lanka the inner bark is rolled into finely-layered quills of Ceylon cinnamon. In Vietnam the inner bark is curled into circular tubes of Saigon cinnamon or into the figure 3, which brings luck. Good quality cinnamon sticks are beautiful.
